
Ancillary Categories
What is an Ancillary Category?
In a BBQ competition, an Ancillary Category refers to any competition category outside the main meat categories (usually chicken, ribs, pork, and brisket in KCBS events). These categories give teams a chance to show off their creativity and skills with different ingredients and cooking styles.
Some common examples of ancillary categories include:

Desserts (like smoked cheesecake or cobbler)

Anything Bacon

Seafood (like smoked salmon or shrimp)

Vegetables or Sides

Appetizers (like ABTs or jalapeño poppers)

Hot Dogs or Burgers
-
Anything on a Stick
They're often judged differently than the main meats and sometimes allow more freedom with presentation and flavor profiles. These categories are especially fun for spectators and great for teams to loosen up and have fun with their cooks.
And this year we are doing 2 categories, you can do both or one all up to you!

Option #1 Blueberries & Maple - Seeing that this is a Canadian event on the east coast why not throw in something Nova Scotia is known for!
Option #2 Turkey - A traditional plate for many during the holidays! and many ways to cook it, lets see what takes place!!
THE RULES - Have to provide your own ingredients for this mini event, this will be Open Presentation, so open plate, open garnish with a max plate size of 12"x24"
and of course have fun!
